Tomato-Corn Pie

I am never actually going to cook this. But I still think about it almost every day since it's been posted on Smitten Kitchen.

  1. Too much mayonnaise in the recipe; I'd cut it in half. Also, make sure you use finely grated cheddar if you want it to melt in the initial baking process; coarsley grated cheese didn't melt until the reheat. Otherwise, pretty good and not very time-consuming if you're a quick peeler and chopper (I had my mom's assistance there).
