Failing to fry a lemon.

  1. This is from the Zuni Cafe cookbook. I haven't tried it yet. (1) Scrub the lemons seriously to remove the wax--or use home growns. (2) Slice 1/32" -- shirt cardboard thin. (3) Dip in buttermilk, then flour, ideally mixed with semolina. (4) Fry in peanut oil at 370F.
